Super Delicious Chicken Coconut Curry..

Super Delicious, spicy and mouth watering recipe for one from my mothers recipe...


Simple method but with little technique makes this curry supremely yummy...


This recipe is enriched with coconut milk to make it more creamier and headful taste...

Lets start with the recipe...







Preparation time: 45. mins

Cooking time : 45 mins

Serving: 2-3


Ingredients:

  • 500 grams boneless chicken thighs or breast...

  • 100 gram plain yougurt

  • 2 tbsp olive oil

  • 2 tbsp ginger paste

  • 2 tbsp garlic paste

  • 1 Medium size onion

  • 1 tsp cumin seeds

  • 2 bay leaves

  • 2 tsp garam masala

  • 2 tsp coriander powder

  • 2 tsp cumin powder

  • 1 tsp turmeric

  • 200 ml coconut milk

  • 1/2 lemon juice

  • 1 tsp black pepper

  • 1 tsp fenugreek leaves

  • 1 tsp mustard powder

  • 1 tsp cardamon powder

  • 1 tsp nutmeg powder.

  • 1 tsp asafoetida.

  • 1 tbsp Salt for marination and curry adjust as per taste..


PS: You can skip the ingredients after coconut milk by adding 2 tsp chicken curry masala.


For Marination chicken:

  • Chicken+ yougurt+chilli+garam masala+salt. (Combine well together and keep it aside for 30 mins)

For Cooking Directions:

  1. Take a pan add oil, cumin seeds, bay leaves let it sputter for 1 mins

  2. Add evenly chopped onion and fry till it gets golden in color.

  3. Add ginger and garlic paste followed by all the spices mentioned above... Skip spices as mentioned if you are adding chicken curry masala.

  4. Mix well and saute for about 5-6 mins. Keep stirring to avoid burning..

  5. Once you start getting all spices aroma add chicken and saute in high flame for 10 mins.

  6. After 10 mins reduce the flame to low temperature and add coconut milk and half glass of water... and let it cook for next 20 mins. Keep stirring in regular interval.

  7. After 20 mins add lemon juice and switch off the flame in 1-2 mins.

  8. Taste and adjust salt as per your taste..

  9. Garnish with fenugreek leaves (Kasoori methi) Totally optional.



Its ready serve hot with rice, naan, bread or Roti..
