This recipe is tried and tested in several ways and with different spice mix. however this one is my favourite because it marinated in herbs and spices and with lot of fresh spinach and yogurt....
When I started cooking chicken the very first recipe was chicken kadam the easiest and flavourful recipe. One from my mom's kitchen that is also super tasty and delicious
Well talking about this recipe is full of nutrients and good fats. I always try to make things less unhealthy and making chicken with less oil is not an option but I did tried with only 2 tbsp of oil and natural oil from other ingredients...
So let dive into my fav Spinach chicken curry recipe....

Preparation: 45 mins
Cooking time: 40 mins
Serving: 4-5
Ingredients:
600 grams boneless chicken thighs or breast
100 grams plain yogurt
2 tbsp olive oil
2 tbsp garlic paste
2 tbsp ginger paste
1 tbsp red chilli powder or paprika
1 tbsp coriander powder
1 tbsp cumin powder
2 tbsp garam masala
2 tsp turmeric
1 tsp cumin seeds
1 tsp tandoori masala (Totally optional)
2 onions finely chopped
2 tomatoes finely chopped
2 tbsp chicken curry powder (if not available then plain curry powder will also do but then add 1 tsp nutmeg, 1 tsp cardamom powder and 1 tsp asafoetida)
2 bay leaves
Salt as per taste
120 gram baby spinach (washed and chopped)
1 whole lemon juice
For Chicken Marination: [ Should be kept for Half an hour]
Take chicken add yogurt ,half lemon juice, salt, chilli powder, garam masala, and turmeric.
Mix well and keep it aside for 1/2 an hour.
Instruction:
Wash boneless chicken throughly with cold water cut in to bite size pieces or if as per your preference.
Heat a pan on high flame add oil followed by cumin seeds, onions and bay leaves, Saute until onions turns golden brown. After that ginger garlic paste and saute for more 2-3 mins then add tomatoes and all other spices.
Keep the flame on high and Saute until it you smell the aromas of all spices for about 3-4 mins.
Add Marinated chicken and give a good mix instantly to avoid curd breakouts once stirred well add spinach and cook for about 10 mins on high heat.
After 10 mins reduce the flame to medium and add 2 cups of water in to the pan.
Keep stirring after every min...for next 20 mins.
Check chicken after 20mins that its well cooked if not then keep it for more 1-2mins
Lastly add remaining half lemon juice and give a last stir.
Its ready...
Serve hot with Naan or Rice....
