One of the most flavourful chicken curry you can have with just simple ingredients
Its tangy flavourful and delicious recipe chicken laksa..
I have used white wine in this recipe you can always replace it with the subsitute like chicken broth and if you don't have lemon zest you can replace it with the substitute by adding lemongrass stalks. Its gonna work both ways and the taste will not affect..
So lets start with the recipe
Preparation time: 10 mins
Cook time 30-40 mins
500 grams chicken thighs
2 tbsp olive oil
2 stalks of green onion
1 medium size onion
2 tbsp lemon zest ( or 2 stalks of fresh lemon grass)
2 green chillis
2 tbsp garlic (minced)
2 tbsp ginger (minced)
2 tbsp coriander powder
2 tbsp curry powder
1 tbsp cumin powder
1 tsp salt (adjust as per taste)
1/2 white wine ( 2 cups chicken bone broth)
1 cup water
400 coconut milk
1 tsp kashmiri red chilli powder
Heat the pan to medium and add oil, onion, green onion, chillies, ginger, garlic and saute for 2-3 mins.
Then add curry powder, cumin, coriander powder and fry for more 2-3 mins
Now add salt, chicken coconut milk, water and wine or broth and saute cook for 25-30 mins
Add Kashmiri red chilli powder for beautiful color.
Switch off the flame once the chicken is well cooked..
And it ready....
