Mexican burritos is just amazing food for lunch and dinner options
Mixed with herbs, spices healthy beans and fresh veggies..
Its a well-balanced dinner or lunch option with protein, carbs and healthyfats.
Very simple and easy to make and will be ready in mins...
You can add chicken, beef, pork, ham eggs or just veggies as per your choice of food habits.
I have make Egg burrito bowl but can add tandoori chicken too...
Preparation time: 15 mins
Cooking Time: 15-20 mins
1 cup pre boiled brown rice
1 cup kidney beans boiled
1 cup lettuce or any veggies
2 tbsp chitpole mayo
1/2 cup burritos tortilla chips
1 tbsp Olive oil
Salt to taste
Boil the water and add 1 tsp salt and 1 tsp oil and add pre boiled rice and cook for 10 -12 mins till it gets cooked.
Heat the pan and add 1 tsp oil eggs and saute it with salt and pepper..
Take a bowl and add boiled kidney beans and add salt and pepper with some garam masala and toss it
Chop lettuce, olives and avocaods into bite size.
Now take a eating bowl base with rice, then topped with kidney beans, eggs and veggies, add mayo and chipotle chips and its ready...
If not eggs and you want to try chicken then take chicken breast or thighs in the bowl washed.
Marinate with salt pepper and chilli powder with some chicken tandoori masala and toss it nicely.
Heat the pan and add 1 tsp oil and place the fillets marinated with spices and grill it till it reaches 165 F or you can refer the detailed chicken tandoori recipe in my recipe index.
Enjoy your nutritional bowl with some tortilla burrito chips...
